Tomato and Mozzarella Pita Pockets

Tomato and Mozzarella Pita Pockets. These are super easy to make and you can enjoy them for lunch or maybe for a picnic or a snack.
- 1 small tomato
- 20g (1/2 standard ball) mozzarella cheese
- 2 mini wholemeal pitta breads
- Handful of lettuce
- 1. Chop tomato and cheese in to slices.
- 2. Cut pita bread in half and open centre to make it like a "pocket." Fill it with tomato, mozzarella and lettuce.
- 3. Enjoy!
