Healthy Nachos. This is a really quick and healthy dish that all the family will love. The tomato sauce is packed with veggies and can prepared in advance and frozen to save time. Turkey mince is lower in calories and fat but you can also use lean beef mince depending on your preference. This dish will also work with white potatoes.

- 4 medium sweet potatoes
- 1 tsp coconut oil
- Salt & pepper
- 500g turkey mince
- 1 tsp coconut oil
- Salt & pepper
- 735g hidden veggie tomato sauce, pre-made (search recipe)
- 3 Tbsp Greek yoghurt
- 1.5 Tbsp Ketchup
- 15g cheddar cheese (30% less fat)
- 1. Pre-heat oven to 200°C/180°C fan assisted/gas 6
- 2. Wash sweet potatoes then cut into round slices or into wedges. Toss with melted coconut oil, salt and pepper. Place on a baking tray and cook for 20-25 minutes, until sweet potato starts to brown and is tender when pierced with a fork
- 3. While sweet potato is baking, heat a large pan on medium high heat, add a teaspoon of coconut oil then add the turkey mince, salt and pepper. Reduce heat to medium and cook until browned
- 4. Add the pre-made tomato sauce, reduce heat to medium low, and leave to simmer for about 10 minutes
- 5. Combine Greek yoghurt with ketchup, mix, then set aside
- 6. To serve, place sweet potato "nachos" in a bowl or on a plate, top with mince, taco sauce and a sprinkling of cheese
