Coconut Bites. If you like Bounty Bars you will love these super easy coconut bites using only 5 ingredients!

- 500g desiccated coconut
- 1.5 Tbsp maple syrup
- 2 Tbsp melted coconut oil
- 1 tsp vanilla extract
- 200g dark or milk chocolate or a mix of both
- 1. In a food processor or a Nutri Bullet blitz together the desiccated coconut (keep some back for the final step), maple syrup, coconut oil and vanilla extract.
- 2. Line a tray using parchment paper.
- 3. Pinch some of the mixture and roll it in between your hands to form a ball shape and place on the tray.
- 4. Once you have used up all the mixture place the coconut balls into the freezer for 10 minutes
- 5. Melt the chocolate in a glass bowl over a saucepan filled with water on a medium heat or alternatively you can melt the chocolate in a heat proof dish in the microwave stopping every 30 seconds to stir.
- 6. Remove the coconut balls from the freezer and coat each one in the chocolate and putting them back on the tray.
- 7. Cover some of the coconut bites with the left over desiccated coconut (this is optional). Place into the fridge for 15 minutes and enjoy.
- 8. Tip: Store in an airtight container or lunchbox in your fridge for up to 5 days (if they last that long!)
