Coconut Banana Ice Cream

Coconut Banana Ice Cream. Simple, low fat, nutrient packed ice-cream ready in 1 hour.
- 42.5g desiccated coconut
- 4 bananas
- 50ml coconut milk
- Raspberries to decorate (optional)
- 1. Chop up banana and put into to freezer bags and freeze for 1 hour or until frozen.
- 2. Combine frozen banana, desiccated coconut and coconut milk (or any milk of choice) in a bowl and blitz with a hand blender until smooth.
- 3. Divide into bowls and top with desiccated coconut and raspberries (optional)
